Choose the "Volume" value between mute, low, medium and high.
The "Number of Beeps" parameter shows how many times the ringtone repeats.
The "Default Ringtone" is a ringtone which will play for all unconfigured contacts.

To see contacts with a custom Email ringtone just filter contacts by "Custom Mail Ringtone". To find contacts with a default ringtone, choose "Default Mail Ringtone" item.

Note: you should disable the sounds for incoming SMS and e-mail in your BlackBerry Profile settings. Otherwise two melodies will play simultaneously. Go to Profiles - Advanced - Your Active Profile - SMS and Mail messages. Please set the "Out of Holster" and "In Holster" parameters as "None" or "Vibrate".
